Chilaquiles
Instructions
1. Blend the husk tomatoes and serrano peppers until tender. Add the husk tomatoes and serrano peppers into a blender along with the garlic cloves and salt. Blend until smooth.
2. Cut up the tortillas into fourths then add oil into a pan on medium heat and fry the tortillas until golden. Remove them from the oil and place on a plate with a paper towel to absorb excess oil.
3. In another pan add oil on medium heat then add in the blended mixture and let boil for a minute then let it come to a simmer for 5 minutes.
4. Cook beans of choice and fry the eggs to go on top.

Fried tortilla chips simmered in salsa verde and topped with eggs, cheese or meat and often serves with black or pinto beans.
Fun fact: It was originally invented as a way to use leftover tortillas to avoid wasting food.

- 1/2 cup of queso cotija

- 2 pounds of husk tomatoes
- 4 serrano peppers
- 2 garlic cloves
- salt, to taste
