Nopales Rellenos
Instructions
1. Remove the thorns from the cactus with a knife or sharp blade
2. Place water and a little salt into a medium deep pan and set to boil, once boiling add the thornless cactus leaves.
3. Wait 10-12 minutes or until the cactus is soft. Then drain water from pan and set aside
4. Use a flat pan on medium heat to cook the cactus paddles on both sides.
5. In another pad on medium heat, add oil and then add your choice of protein. When it has browned slightly, season with salt, garlic powder, onion powder and a pinch of cumin then stirn.
6. Once the meat has cooked to your liking, set aside.
7. Chop up onions, tomatoes and jalapenos into small cubes.
8. Set a pan to medium heat and add oil. Once heated, add the chopped vegetables and stir until desired texture.
9. Then sprinkle mozzarella cheese to your liking and stir everything together.
10. One a plate, place one of the toasted cactus paddles the add the vegetable and cheese mixture on top and then cover with another cactus paddle and,

- 2 Cactus paddles
- Mozzarella cheese
- 1/2 tomato, diced
- 1/2 onion, diced
- 1 Jalapeno
- Meat of choice (typically carne asada)
